Grilled Vegetable Skewers

SERVES: 2-4
Vegetables deliver the bounty of the season! This preparation brings a fresh, colorful, but still grilled, counterpoint to all the protein typically prepared during a backyard barbeque. It’s a tasty way to get your veg in. Beautiful as a main or side.
INGREDIENTS
- 1 medium zucchini, cut into 1 inch disks
- 1 medium summer squash, cut into 1 inch disks
- 1 medium onion, cut into eight pieces (halved, quartered, cut into eighths)
- 12 cocktail tomatoes (larger than cherry, smaller than globe – perfect for grilling)
- 12 button mushrooms
- Wildfare Barbecue Sauce (find in Recipes)
- Sea salt – for finishing
PREPARATION

Skewer the vegetables in the sequence and combination you prefer. Some people love the colorful variation. Some prefer one type of veggie per skewer to really control consistent cooking times. Note: the veggies should all be roughly the same size. Tip: if you don’t have flat skewers, run two round skewers side by side about ½” apart to prevent the vegetables from spinning on the skewer when you are trying to turn them over on the grill.

Marinate the veggie skewers in ½ cup of Wildfare Barbeque Sauce for 15 minutes. A shallow tray works well for this.

Remove the skewers and reserve the BBQ sauce for brushing during grilling.

Prepare your grill. Clean and oil your grill grate. Create a hot side (direct heat/coals) and a cool side (indirect heat/no coals).

Place a smaller grill grate on your grill (the veggie skewers may need a little more support). Spray the grate with nonstick spray, then place the skewers in a single layer on the grate (you may need to use two grill grates or cook in batches). Grill on the first side for 2-3 minutes (until you get the level of char you want), then gently flip the skewers over, brush with a little more of the marinade and grill it for 2-3 minutes on the second side. NOTE: You’ve got the grill marks, but you may not have the desired doneness of your vegetables. In this case, carefully transfer the smaller grill grate with the skewers on it to the cool side of the grill. Cover and let cook until desired doneness is achieved.

Transfer the vegetable skewers from the grill onto a plate. Before serving, brush with any remaining marinade if desired and sprinkle with sea salt. Enjoy!
